Dosi per 6 persone
- 60 g di purea di peperone (giallo, rosso e verde)
- 60 g di albume
- 35 g di olio di girasole
- 15 g di tuorlo
- 55 g di farina auto lievitante
- 40 g di zucchero semolato
- pizzico di sale
Eliminare con un pelapatate la buccia dei peperoni, ridurre in cubetti e cuocere al microonde sino a che non risultino morbidi.
Frullare con un mixer

poi la farina, lo zucchero e il sale, mescolare
e infine mentre il mixer è in funzione unire l’olio a filo.
Emulsionare sino ad
ottenere un composto morbido e leggermente montato.
Suddividere il
composto in contenitori adatti al microonde e cuocere alla massima potenza per
1’ e 30’’. Appena estratti i contenitori vanno capovolti su una griglia in modo
che la spugna abbia modo di asciugarsi senza collassare.
